The 1900’s era Piston & Ring Building in Seattle’s Capital Hill neighborhood houses the upscale-rustic vegan restaurant, Plum Bistro Seattle.  The intention for this project was to create an elegantly rustic interior using sustainability and adaptive reuse.  The restaurant’s interior design marries adaptive reuse of the building’s original structure with beautiful craftsmanship, creating a natural, warm space.  The resawn wood ceiling and wood trusses were kept, along with the exposed board-formed concrete walls.  These existing aspects blend honestly with an open kitchen, new steel elements, rustic benches, and antique tables.  The space created for the bistro falls in well with the restaurant’s philosophy of natural, simple, handcrafted food.
